  2. 1 cup Kabuli Matar or Chickpeas
  3. 4-5 garlic cloves
  4. 1 inch cinnamon stick
  5. 2 black cardamom
  6. 3-4 green cardamom
  7. 2-3 cloves
  8. 3-4 black peppercorns
  9. 1 tsp carrom seeds
  10. 2 Tbsp tea concoction
  11. as per taste Salt
  12. 1 large onion paste
  13. 1 Tbsp ginger - garlic paste
  14. 3-4 green chillies chopped
  15. 1 inch ginger julienned
  16. 1/2 cup tomato purée
  17. 1 Tbsp coriander powder
  18. 1 Tbsp cumin powder
  19. 1 Tbsp red chilli powder
  20. 1 Tbsp Anardana powder
  21. 1 tsp garam masala powder
  22. Pinch kasuri Methi
  23. Sprig coriander leaves chopped
  24. as required Oil
  25. For Bhature
  26. 2 cups All-purpose Flour
  27. 1 tsp baking powder
  28. 1 tsp baking soda
  29. as per taste Salt
  30. 1 Tbsp sugar
  31. 2 Tbsp ghee
  32. 1/2 cup curd
  33. as required Adequate water
  34. as required Oil to fry
  35. as required Garnish with onion and green chilli salad

Instructions to make to make Chole Bhature

  1. For Chole - soak Chickpeas for 24 hrs, wash well in running water. Add to a pressure cooker with cinnamon stick, black cardamoms, green cardamoms, black peppercorn, cloves, garlic cloves, black tea concoction, salt, water upto 2” above the chickpeas carrom seeds and on medium flame pressure cook for 3-4 whistles, depressurise and set aside
  2. In a pan heat oil and add onion paste, fry till golden colour, adding little water incase it sticks to the bottom. Add ginger garlic paste and cook for 1 min. Add tomato purée, salt and cook until oil surfaces
  3. Add green chillies, ginger julienned, add cumin powder, coriander powder, Anardana powder, red chilli powder, and mix well. Add little hot water if need be. Check the consistency. Add garam masala powder, kasuri Methi and chopped coriander powder. Mix well and set aside
  4. For Bhature - in a bowl add All-purpose flour, baking soda, baking powder, salt and sugar and mix well. Add ghee and curd and mix well. Add adequate water and make a soft yet stretchy dough. Add oil to smear and cover with a muslin cloth for 1 hour
  5. Make balls and roll with a rolling pin, make thick on the edges and smear oil if need be. Roll out roughly and not necessarily circular in shape.
  6. In a heavy bottomed pan heat oil and fry one at a time until fluffy and golden on both sides. Set aside
  7. Plate with salad and enjoy
