  2. 4 Green cardamom
  3. 2 Black cardamom
  4. 5 Cloves
  5. 1 inch Cinnamon
  6. 1 floret Mace
  7. 1/2 Nutmeg
  8. 1 piece Star anise
  9. 1 tsp Black peppercorn
  10. 1 tsp Fennel seeds
  11. 1 tsp Cumin seeds
  12. leaf Bay
  13. 1 tbsp Caraway seeds
  14. To marinate Chicken :-
  15. 500 grams Chicken
  16. 1 cup Hung curd
  17. 2 tbsp Ginger-garlic paste
  18. 2 tbsp Coriander leaves+mint leaves+green chilli paste
  19. 2 big sized - Fried onions
  20. 1 piece Lemon juice
  21. 1 tbsp Cumin powder
  22. 1 tbsp Coriander powder
  23. 1 tsp Kashmiri red mirch powder
  24. Salt as per taste
  25. 4 tsp Mustard oil
  26. To make rice :-
  27. 2 cups Basamati rice
  28. 1 Bay leaf
  29. 2 Green cardamom
  30. 4 Cloves
  31. 1 inch Cinnamon
  32. Salt as per taste
  33. 1/2 bowl Mustard oil
  34. To make biryani :-
  35. 1 pinch Saffron
  36. 1 cup Warm liquid milk
  37. 4 tbsp Fried onion
  38. 1 tbsp Lemon juice
  39. 1 tsp Rose water
  40. 1 tsp Keora water
  41. 1 drop Mitha atar
  42. 2 tbsp Ghee
  43. 3 medium sized - Fried potatoes

Steps to make to make Kolkata Style Chicken Biryani :-

  1. Marinate chicken overnight in a bowl.
  2. Dry roast all the biryani spices separately and make a powder, that is called Biryani masala.
  3. Wash and clean the rice and soak for 1 hour.
  4. Boil water.
  5. Add mustard oil,salt, bay leaf, Cinnamon, green cardamom, cloves in it.
  6. Add Basamati rice.
  7. Cook until rice is half done.
  8. Separate whole garam masala and bay leaf with sieve.
  9. Drain water and spread the rice on flat surface.
  10. Soak the saffron strands in warm milk and keep aside for 1 hour.
  11. Take a large handi and arrange the rice, marinated chicken and fried potatoes in layers separated by ghee and saffron milk.
  12. Sprinkle rose water, keora water, biryani masala, lemon juice on it.
  13. Cover the air tight lid.
  14. Cook it for about 1 hour in low flame.
  15. Once done transfer to the serving plates.
