  4. 1 tbsp green chillies ginger paste

  9. 1 tsp cumin seeds
  10. 1 cup mixed vegetables (carrot, green peas, potato, capsicum)
  11. 1 bay leaf
  12. 1 cinnamon stick
  13. 1 tbsp cashew nuts halves
  14. 1 tbsp raisins (kismis)
  15. 1/4 tsp turmeric powder
  16. 1 tsp red chilli powder
  17. 1 tsp garam masala/biryani masala
  18. 1 cup blanched spinach purée
  19. to taste Salt
  20. 1 cup To serve veg curd raita

Steps to make to make Hyderabadi Veg Biryani

  1. Wash and soak basmati rice for 30 minutes. Boil/ cook in salt water. Strain and keep aside. Boil carrot, potato and fresh green peas.
  2. In pan add, heat oil. Add green chillies ginger paste. Add chopped onion, sugar and salt,saute till softened and brownish in colour. Cool and grind to smooth paste. Keep aside.
  3. In thick bottom pan add heat ghee. Add cummin seeds,bay leaf, cinnamon stick as splutter add grinded onion paste. Saute for 1 minute. Add capsicum pieces and boiled vegetables. Saute for 2 minutes.
  4. Add cashewnuts halves,raisins. Mix & saute well. Add turmeric powder,red chilli powder, garam masala/ biryani masala, salt. Mix and saute for 1 minute.
  5. Add blanched spinach purée,mix well. Add boiled basmati rice. Mix gently and cook for 2-3 minutes.
  6. Serve/ Relish Delicious Hot Hyderabadi Veg Biryani with veg curd raita.
