- 750 gram mutton mix boti
- 5 onion slices
- 1 tbsp Garlic paste
- 1 tbsp Ginger paste
- Whole Garam Masala
- 2 black cardamom
- 4 green cardamom
- 5-6 cloves
- 1 cinnamon stick
- 1 bay leave
- 6-7 black pepper corns
- 1 star anise
- 1 small piece of nutmeg
- 1 piece javitri
- 1 glass water
- Dry Spices
- 1 tbsp crushed cumin
- 1 tbsp coriander powder
- 1 1/2 tsp black pepper powder
- 1 1/2 tsp white pepper powder
- 1 tsp all spice powder (Garam Masala Powder)
- 4-5 dry plum
- 1 cup yogurt whipped
- For Rice
- 1 kg Basmati Rice
- 2 tbsp salt
- 1 tbsp vinegar
- Whole dry spices ( black pepper, black cardamom, cloves cinnamon
- Few mint leaves
- Other condiments for Garnishing
- 1 tomato slices
- 1 lemon slices
- 4-5 green chillies chopped
- Green coriander leaves
- Mint leaves
- For Rice layering
- 4-5 red chilli button
- Curry leaves
- 2 tbsp oil
Steps to make to make White Mutton Biryani
- Wash and clean the mutton mix boti.
- Cut the onion in thin slices. Gather all dry spices.
- In a wok heat oil add onion with all whole spices.
- Fry for 5 minutes until translucent.
- Now add mutton, ginger garlic paste and bhonify together for 10 minutes.
- Add water and cover the lid, cook on low heat until mutton is 70 % cook.
- Meanwhile take a bowl add yogurt and all dry spices,dry plum and mix well.
- Once meat looks soft, add a cup of masala whipped yogurt and potato together. Cook more for half hour on medium flame.
- White mutton masala is ready.
- Mean while, take a big pot for rice. Fill it up with water and put on stove. Add in whole dry condiments (black pepper, cardamom, cumin, cloves, cinnamon) with mint leaves. Once the water starts boiling, add soaked rice, salt and vinegar. In 10 to 15 mins, rice gets done. Strain it with strainer.
- Take the same big pot, pour oil and add some red button chilli and curry leaves. Fry for a while then start layering.
- Now layer with half of the rice and gravy
- Add tomato slices, coriander leaves, lemon slices
- Add green chillies chopped and mint leaves
- Repeat one more layer. Place the coriander leaves, tomato, green chilli, lemon slice and mint leaves on top.
- Cover with the remaining rice.
- Sprinkle some black pepper and all spice powder on top.
- Cover the lid for dum.
Place on low heat flame on stove then place a flat tawa underneath it and simmer for 20 minutes minutes on low flame. After dum like this it becomes so tempting and aroma starts spreading all over my kitchen 😍 - Serve hot with mint raita 😋
